The Barbaresco is from Abbona's vineyard on Faset, a much coveted south-facing amphitheatre, which is renowned for producing wines of impressive aromas and structure. It too has benefited from the current cellar technology which emphasizes fruit and bouquet while softening the tannins. The result is a wine of great power with incredible finesse. Deeply coloured, fresh, ripe fruit, with a strong backbone of spice and wood and a rich, full body.
Abbona uses closed stainless steel tanks at controlled temperatures. He frequently pumps the juice over the musts in a brief but energetic system of maceration which extracts more color from the skins while leaching less tannins. He induces an early malolactic fermentation to give the wine more suppleness, smoother texture and greater fruit components. He uses a touch of new oak and a long period of bottle aging. Drinking well in 2011, but we recommend that you hold this wine in your cellar until 2013 as by then it will have developed more bouquet and flavour.
