Cellarmaster Johan Joubert is passionate about Chenin Blanc, especially low-yielding bush vines. These are on the slopes of the Helderberg near Stellenbosch, and are south westerly facing. The low crop, age of the vineyard and cool microclimate during the ripening period ensured a very good wine. Whilst the fermentation process was started in stainless steel, the young juice was later transferred to oak ( 20% new, 50% second- and 30% third-fill ) to complete its fermentation, and subsequently mature for five months. On the nose, there are aromas of peach and litchi, with hints of botrytis and subtle oak. Ripe layers of tropical fruit, with the oak, give this wine a creamy mouthfeel, with elegant acidity.
