Elgin Region
Wine of Origin Elgin –this farm is Thelema’s outpost in Elgin, where Gyles Webb has established more immaculate vineyards and makes more immaculate wines. Watch this space for more, but in the meantime we have chosen this unusual blend (86% Viognier/14% Roussanne) for summer drinking. Both cultivars were fermented in oak barrels and then aged on their gross lees for ten months, to gain complexity. Gyles and Barbara Webb’s son Thomas describes it is follows: “ this blend exhibits sun-dried apricot and petal aromas, with rosemary and almond undertones. The wine has excellent texture and complexity – a perfect match for mildly spicy dishes”. It is bone dry at 1.8g/l residual sugar, but has a firm yet soft acidity level of 5.9g/l. Serve well chilled – we thought with Sushi!
