This 100% Chenin Blanc has been naturally fermented in wood. Allowing wines to ferment naturally is a slower process, and the resulting wine softer and more complex.
Anima has a nose that develops intriguingly in the glass. Winter melon, pineapple, lime and a hint of honey confirm the elegance and fullness of this softly wooded, supple Chenin Blanc. The palate is dense with fresh fruit flavours of gooseberry, quince and peach, all harmonizing superbly with the soulful minerality that gives this wine its name.
With the wine’s clean acidity, a number of dishes would pair well, but the classic roast chicken with lemon will be fantastic.
