75% Sauvignon Blanc, 25% Semillon
The grapes for this wine were harvested at Caroline Rillema’s own vineyard, just 18km inland from Pearly Beach, not far from Elim.This is where the cultivars Sauvignon Blanc and Semillon thrive. Caroline usually has her wine made and bottled at Black Oystercatcher in Elim ( called Celestina ), but this vintage, sold all her grapes to Pieter Walser of Blank Bottle. He adds no cultured fermentation yeasts, instead allowing the juice to ferment on its own, no matter how long it takes. Nothing else is added, and the result is an amazing, dancing, dappled wine with beautiful aroma and flavour. 12 months’ maturation in old barriques brings a beautiful evolution to the wine.
Pale gold colour. Welcoming green vegetal character upfront that blows off to reveal apples and gooseberries which are counter balanced by some citrus fruit and some winter like spices. Interesting mix of minerality and waxiness.
It would suit a Caesar salad well, complementing and lifting the salad flavours and balancing the creamy dressing.
