Region: Elgin & Baardskeerdersbos
A beautiful expression of Semillon by Pieter Walser. He sourced Semillon from two different cool climate locations: Elgin and Baardskeerdersbos, the latter close to Pearly Beach. The wine is composed of three parts: one-third is Elgin fruit made in clay amphorae, one-third Egin fruit in old barrique and one-third B’bos fruit in old barrique. All fermented naturally on their own yeasts. The result is one of the most gentle, beautiful Semillons you can imagine, with all elements woven together like a soft, natural fabric. The oak is hardly perceptible and it drinks easily now, but will mature very slowly into a complex wine.
Pithy, herbal and toasty, it has lanolin and honeysuckle aromas and stony, tangy aftertaste.
Pair it with a rustic pasta dish, like wide-ribbon tagliatelle with roasted artichokes and olive oil.
