Domaine des Malandes is a family estate, combining traditional winemaking with the best modern equipment. The care and respect brought to the vinification process and also to the various locations of our plots contribute largely to the finesse of our wines, resulting in high quality wines which achieve many International awards. All our Chabliscan be perfectly matched to any kind of seafood, grilled fish, pork, poultry or in a delicate sauce.
Chablis has the good fortune of possessing a unique type of soil called Kimmeridgian which give the wines their mineral and vibrant flavour. Domaine des Malandes’ main objective is to minimise intervention allowing the fruit and the soil to express themselves. Therefore our team at the Domaine controls the vine’s foliage and fruit, and effectively uses integrated pest management. So when harvest time arrives, the grapes reach optimal maturities and qualities.
In the cellar, a lot of care is taken with vinification. Guénolé Breteaudeau’s purpose in winemaking is to allow the fruit to assert their own distinct characteristics to reflect the terroir and climate of Chablis.
Mont de Milieu is from 35 year-old vines, and the fruit is hand harvested. Protection of the crop against sun or/and rain. Alc and Malolactic. Fermentation 50% of the cuvée in stainless steel tanks under controlled temperature (18°) and 50% in barrels of 1 to 5 years old. After racking, we blend the two cuvées in a tank. Ageing: Ten months in stainless steel tanks. On average, only 2 000 bottles produced.
