Cape Chamonix Wine Farm produces a range of premium wines that capture the essence and splendour of the estate. The farm is situated on the eastern mountain slopes of the fertile Franschhoek Valley to the north of Cape Town.
It was originally part of the first farm, La Cotte granted to the Huguenots in 1688, of 290 hectares, on which much is planted with fruit trees and different vines of export quality. Moreover, it boasts some of the highest planted vineyards in the Cape. Against the mountain the farm benefits from cool breezes during hot summer months and stony clay-rich soi, giving the wines a unique personality and character.
The first 10% of the grapes are whole bunch selected by hand and fermented in Nomblot concrete fermenters where carbonic maceration takes place for ten days on the skins. The remaining component is destemmed and fermented in open oak vats for fourteen days. After malolactic fermentation the wine is matured for sixteen months in 228L French oak barrels with 30% new wood.
