Businessman Jean-Philippe Colmant moved from Belgium to a five hectare parcel near the town of Franschhoek in 2005, after being seduced by both sparkling wine and South Africa. Here he established Colmant Cap Classique & Champagne. His cap classique specialist venture is in the expert hands of winemaker Paul Gerber and equally fizz-obsessed consultant Pieter Ferreira. Both are focused on making precise, incremental gains while maintaining consistency and character, hence the use of reserve wines – some up to fifteen years old – for blending in the boutique cellar. Parcels in Robertson, Elgin and Hemel-en-Aarde are carefully selected to supplement home-grown chardonnay and pinot noir, and time on the lees is never less than two years, for the necessary complexity and balance.
Colmant Blanc de Blancs is made from Chardonnay off selected vineyards in Franschhoek, Elgin and Robertson. True to house style, a portion of the base wine (15%) was barrel fermented and 20% of the wine is specially selected from the previous year’s harvests. The wine undergoes its long forty-five to forty-eight month maturation on the lees before final release.
This, their crème de la crème, is an elegant expression of distinctive excellence.
