Darling Cellars is situated on the west coast of South Africa, approximately one hour’s drive from Cape Town between Malmesbury and Darling, and 15 kms from the coast.
1996 heralded a new era for the Darling region with the establishment of this private cellar. The area was demarcated as Wine of Origin Darling in 2003 and some 20 shareholders produce grapes from a total of about one thousand, three hundred hectares, averaging yields of six to eight tons per hectare.
The cool and temperate West Coast climate lends itself to a variety of different micro- and meso-climates which, along with the different soil types, lead to unique grapes and distinctive wines. Ninety-five percent of all the vineyards are unirrigated (dry land) bush vines (that is, not trellised) resulting in wines that truly reflect the terroir from which they come.
Investment continues in the winery and cellar with some of the most modern and up to date winemaking equipment in the industry today. A bottling line, new presses, a barrel maturation cellar, a new grape off-loading system and continued replanting of vineyards to include noble cultivars all contribute to advances in contemporary winemaking.
