David was born and bred in the Swartland and studied Viticulture and Oenology at the University of Stellenbosch. It was here that he met his wife, Nadia (now a qualified soil scientist and viticulturist).
David gained experience both locally and internationally. The tasting of Mediterranean cultivars and its regions made a lasting impression on David’s ideas and palate.
‘We are part of the Swartland Independent Producers and believe in a natural approach with our wines. Some of the grapes we work with are harvested from organic vineyards and some from old bush vine blocks from farmers in the Swartland who share the same vision. We believe in a wine style where wines are not influenced by using commercial yeasts, enzymes, high sulphur levels or too much new oak. To date we have not used any new oak and prefer working with older and bigger barrels’
Grapes from six different Swartland Chenin blanc vineyards are used (only dry land farmed bush vines). The ages of the vineyards vary from 35 to 49 years. The grapes are whole bunch pressed and cold settling is allowed for the juice before racking into barrel for spontaneous fermentation. The wines age from vintage to vintage in old 300 L French barrels.
