‘Numerous pickings & relentless selection deliver this consistently gorgeous botrytis dessert from riesling. 2021’s classic bouquet & flavours of marmalade, apricot, rye bread & honey are richly unctuous, but 8 g/L acid ensures a balanced finish. ‘Having seen the amount of work that goes into producing this world-class sweet wine makes me admire it even more. Made with 90% botrytis-affected Riesling from the oldest block on the farm, it’s very much a labour of love. Fermented in old oak, Edelspatz has subtle baking spice top notes, flavours of peach, lime, dried fruit and crème brûlée, incredible minerality and a lovely balance between natural acidity and 175 grams of residual sugar. 2023-30’ – Tim Atkin MW, SA Special Report 2023, 96/100

High on the slopes of the Simonsberg Mountain, 50km from Cape Town, lies the family-owned Delheim estate. Here the Sperling family has been making wines of character for many decades. The late Michael Hans ‘Spatz’ Sperling, was the Patriarch and also a South African wine industry legend. His wife Vera still resides on the farm. Eldest son Victor Sperling and eldest daughter Nora Sperling-Thiel serve as directors of the company and live on the farm with their families. Delheim is planted exclusively with white varieties, predominantly Chenin Blanc, Chardonnay, Sauvignon Blanc and Weisser Riesling. Delheim is completely unirrigated, with deep soils of decomposed granite. The vineyards lie on slopes created by the ancient flow of the Klippies (stone) river at the foot of the Simonsberg mountain. In the mid 1970s Spatz purchased an additional 80 hectares of prime red-wine land on Klapmutskop, which is situated about 3kms from Delheim and both mountain properties are now farmed as one.
Delheim produce their award-winning noble late harvest wine from the oldest vineyard block on the farm, planted back in 1985.
