Caveau de Bacchus, father-son Lucien and Vincent Aviet, make traditional and artisan (only indigenous yeasts) Trousseau and Poulsard from the heart of Jura’s best region for red wine – Montigny.
In 1960, Lucian Aviet, now known to everyone who loves Jura reds as “Bacchus”, started the domaine. He is still very involved, but now the reigns are gradually being assumed by his son, Vincent. Comprised of just 6Ha total the vineyards are tended “Traditionalist” or “Lutte Raisonnée”. The production is entirely hand-harvested and all de-stemmed. Spontaneous fermentations in large, well-maintained old Alsace Foudres. Bottles have always been sealed with wax.
