65% of the blend is tank fermented – this contributes to the freshness, minerality and overall complexity. The 35% remainder was fermented in barrel with an indigenous yeast strain to enhance the texture and mouthfeel. It was left on extended lees contact for eighty days after fermentation and stirred regularly during this period.
