The sophisticated and age-worthy Dry Red is our interpretation of the classic Cape Red Blends from the mid-1900’s. Inspired by the authentic wines of the past, we work with Cabernet Sauvignon ( 56% ) planted in its home in Stellenbosch as well as South Africa’s two oldest red wine vineyards, both Cinsault ( 26% ). One of the latter dates back to 1900 in Wellington and one dates back to 1932 in Franschhoek. We blend in some high-toned Cabernet Franc ( 18% ) from Stellenbosch’ Helderberg for perfume and vibrancy.
A combination of whole cluster and destemmed fruit, natural fermentation and maturation for twelve months in 500L French oak barrels ( 30% new ), followed by eight months in seasoned 200L foudre. This is our take on South Africa’s rich winegrowing heritage, while reflecting on the future through our modern minimalist winegrowing of today.
Medium to deep bright ruby colour. Attractive aromas of mulberry leaves, cassis and cedar follow through to the palate, which has tight structure, grainy tannins and hints of pepper and tobacco. the finish is firm, layered and long. For optimal pleasure, please decant this wine if broaching within five years of vintage date.
