Region: Stellenbosch
This region is known for its fine Cabernets and this wine represents the distinguished elegance and balance that the varietal can exude there. The vineyards parcels are in the cooler parts of Stellenbosch: one parcel of 39yo dry farmed bush vines planted in the deep alluvial soils of Firgrove; two parcels planted on the slopes of the Helderberg Mountain and one in the deep, decomposed Granite soils of the Polkadraai Hills.
Using a combination of modern and traditional winemaking techniques, the fruit is completely destemmed, naturally fermented and given twelve months in 500L French oak barrels, followed by ten months in large old foudre.
Tasting note
Beautiful bright aroma of charming red roses, blackcurrant, sage. graphite and cedar. These continue on palate, which is filled with juicy blueberries, lined with grippy fine tannins. The complexity and power of the wine is still locked in, but there is great structure, freshness and finesse. With time, it will fill out and develop into a superb wine.
