“The beauty of this wine is even though it stays the same each year (as it’s harvested from the same Single Vineyard classified block on the farm), each year is different. The 2021 vintage shows some restraint at first, but then opens up to show quince, peach and pineapple notes with a freshness and finesse ever present on the palate as yellow peach flavours run through your mouth. The distinctive depth and complexity of fruit we’ve learned to appreciate and love of the Carl Everson Chenin, is on show again with the 2020. These precious 38 year old vines, old French barrels, spontaneous fermentation and minimalistic cellar intervention in the end proclaim our Slanghoek terroir through this wine.” – Winemaker

Opstal is a 7th generation family-run estate, situated at the foot of the Slanghoek mountains in the heart of the breathtakingly beautiful Slanghoek Valley on the Breedekloof Wine Route. The valley forms part of the Breede River Valley with Worcester as the closest, large town. Opstal Estate’s rich history dates back to 1847 when JC Rossouw acquired the farm De Opstal bij de Fonteine. Just over a century later in 1950, 4th generation Carl Everson decided to continue making his own wine instead of joining the local co-operative winery like many other producers. This wine is a tribute to his perseverance and hard work, earthed in the family’s land, during tough times in the industry post-war.
Today, Opstal has a wide range of quality estate wines under three different labels: The fun, easy drinking and pocket-friendly Sixpence Range; the classical and food-friendly Estate Range; and the premium Heritage Range with their multiple 5-star Platter award-winning Carl Everson Chenin Blanc the cream of the crop, This wine is from old vines from a single vineyard planted in 1982, old French barrels, natural fermentation and minimalistic cellar intervention.
