Peter Bayly is a distinguished winemaker and port producer based in the Klein Karoo region of South Africa, renowned for his artisanal approach to crafting premium port-style wines. Together with his wife, Yvonne, he established Peter Bayly Wines in the picturesque Groenfontein Valley near Calitzdorp in 2002. Their estate spans 1.2 hectares, where they cultivate classic Portuguese grape varieties such as Touriga Nacional, Tinta Barocca, and Souzão on the region’s slate and quartz-rich soils .
Peter and Yvonne’s journey into winemaking began after transitioning from managing the boutique Ellerman House hotel in Cape Town to pursuing their passion for wine in the tranquil setting of the Klein Karoo. They are deeply committed to traditional, hands-on winemaking techniques, including natural fermentation in lagares (traditional Portuguese open fermentation tanks), foot treading, and maturation in seasoned French oak barrels
This dry Cape White Port is a blend of the 2008 through to 2021 vintages, produced from 100% Chenin Blanc grown in the deep red fertile soils of the Calitzdorp valley. Only 1300 bottles were produced, using artisanal vinification techniques – such as the use of lagares, manual pigeage and maturation in seasoned barrique.
