Ridgeback, in Agter-Paarl, has been described as a viticulturist’s dream, as the farm is made up of so many pockets of different terroir, mostly on mountain slopes facing different ways. Toit Wessels, viticulturist and winemaker since 2000, has created a superb range of wines, and this is one of them. After crushing, the juice went into 27% new French, Hungarian and Romanian oak barrels where it underwent fermentation by natural yeasts. Notes of pineapple and orange blossom evolve to a fresh, juicy mid-palate with hints of lemon zest and white peach on the finish. This bold wine will complement a more robust fish dish such as Tuna or Salmon and work equally well with roast Pork.
