The beautiful 65Ha Ridgeback wine farm is owned and run by Vernon Cole, who established it on the back of Paarl Mountain in 1997, and bottled his first wines in 2001. The current winemaker, Toit Wessels started in 2001 and also manages the vineyards – it’s no wonder that their range is so outstanding in quality.
The Lion Hound is his everyday red, a blend of 39% Shiraz, 25% Merlot, 16% Grenache, 13% Cabernet Sauvignon and 7% Mourvedre. Each varietal was harvested and fermented separately. A portion of the wine was matured on oak staves while the remainder underwent twelve months of ageing in third and fourth fill barrels ensuring good wood-fruit integration. The wine was then blended and lightly filtered shortly before bottling.
