Ridgeback, in Agter-Paarl, has been described as a viticulturist’s dream, as the farm is made up of many pockets of different terroir, mostly on mountain slopes. Toit Wessels, viticulturist and winemaker, has created a superb range of wines, and this is one of them. All red wines underwent thirteen months of ageing in second and third fill barrels. All the cultivars are so well integrated with each other and the oak. On both nose and palate, it has juicy dark cherries and violets, black pepper and liquorice and a certain minerally earthiness. This wine pairs well with bold winter meat stews. Drink now or age until 2023.
