Between two mighty oceans, on the southern tip of Africa, lies the historic Saxenburg Wine Farm. Here, memory and the seasons conspire with the cellarmaster’s craft to produce unique wines of consistent and exceptional quality. Situated on the hills above Kuils River between the Atlantic and Indian Oceans, the vineyards enjoy ideal soil and climatic conditions aided by the cool breezes from False Bay during the summer months.
The selected areas of the best blocks were harvested at optimum ripeness and yeast fermented in open tanks at 28°C. Regular punching down and pumping-over was practiced, with 2 – 3 weeks of skin contact after fermentation. Barrels: 300 litre French oak barrels of which 40% were new, 40% 2nd fill and 20% 3rd fill. Matured for twelve months with no racking.
