Between two mighty oceans, on the southern tip of Africa, lies the historic Saxenburg Wine Farm. Here, memory and the seasons conspire with the cellarmaster’s craft to produce unique wines of consistent and exceptional quality. Situated on the hills above Kuils River between the Atlantic and Indian Oceans, the vineyards enjoy ideal soil and climatic conditions aided by the cool breezes from False Bay during the summer months.
Only selected vineyards or part of vineyards. Open tank fermentation at 28°C, with punching down and pumping over, four times daily. Up to three further weeks of skin contact after fermentation with malolactic fermentation in tanks, no fining or filtration before barrel maturation. Barrels: 300 litre American and French oak barrels, with 18% new French oak. Twelve months in barrel.
