Silverthorn is named after the prolific Karoo Acacia, whose mass of brilliant white thorns makes it one of Africa’s most powerful images. This elegant Cap Classique is made in the traditional bottle fermented method using 100% Chardonnay grapes. A small portion of the base wine is barrel fermented for added complexity and once bottled the wine spends a minimum of 24 months aging on the lees. Only a limited 3500 bottles were produced. The Green Man appears carved on countless cathedrals and castles with his mysterious semi-human, leaf face silently observing the passing of ages. In his modern guise The Green Man has reappeared under a new name: ecology.
