In 2002, the Vivera family finally realized their dream to purchase an estate in the Martinella district of Mount Etna, on the North Eastern side of the volcano, and build a winery there. The Viveras are a classic example of “all things Sicilian,” with mother Armida coming from Corleone in Palermo, father Antonino hailing from Chiaramonte Gulfi in Ragusa, and their three children, Omar, Eugenio, and Loredana born and raised in Catania. The whole family is involved in the winery.
PRODUCTION AREA: Linguaglossa, north-eastern side of Etna
GRAPE VARIETY: Carricante, from organic method, planted in 2003
SOIL TYPE: Volcanic soil with abundant rounded stones
ALTITUDE: 600 metres above sea level
CLIMATE: Mountain climate, with crisp summer and great difference in temperature between morning and night
TRAINING SYSTEM: Vertical trellis, spur pruned cordon
HARVEST: Meticulous grape selection, hand picked at the end of September
PRODUCTION TECHNIQUE: The grapes are destemmed and softly pressed without oxygen. The fermentation takes place at a controlled temperature of 57°- 61°F. Afterwards the wine rests on the fine lees for 24 months then it concludes its evolution with a 21-months bottle ageing
ALCOHOL CONTENT: 13 % vol.; pH – TOTAL ACIDITY: 3,3 pH- 6,6 g/l
DESCRIPTION: Straw-yellow colour with light greenish hue, this wine has citrus and balsamic fragrances, sulphurous and mineral notes. Savoury and fresh taste with a very long finish
IDEAL SERVICE TEMPERATURE: 54°F, we advice to leave the wine to breathe in the bottle or glasses for 5-10 minutes to enjoy the progressive explosion of aromas
MUM ARMIDA SUGGESTS TO DRINK SALISIRE WITH: Oysters, tagliatelle with mush of pistachio from Etna (Bronte) and shrimps, chowder, fried fish and vegetables
CURIOSITY: Salisire means Sali “the uphill” and Sire “Sir”: dedicated to dad Antonino, the name of this wine remembers all his efforts to plant the vineyard and that only hard work, care and passion can create a unique wine.
